Kolhapuri Misal
Vegetable Biryani is a fragrant, layered rice dish filled with spiced vegetables and basmati rice, enriched with warm milk for added aroma. Perfect with raita or salad for a complete, satisfying meal.
Ingredients:
250 grams basmati rice
½ cup milk (warmed)
2 tablespoons ghee
3 tablespoons oil
3 onions (sliced)
1 teaspoon ginger paste, 1 tablespoon garlic paste
2 tomatoes (chopped)
½ cup curd
1½ tablespoons Ruchira Biryani Pulav Masala
1½ cups mixed vegetables (green peas, cauliflower, carrots)
step by step recipe

- Cook basmati rice in salted water until 80% done, drain, and set aside.

- In a pan, heat ghee and oil, sauté onions until golden, then add ginger and garlic pastes. Add tomatoes and cook until soft, then mix in curd to form a gravy.

- Add Ruchira Biryani Pulav Masala and cooked vegetables, seasoning with salt. Let the vegetables absorb the spices.

- In a deep pot, layer rice and vegetable mix alternately. Pour warmed milk on top, cover tightly, and cook on low for 10-15 minutes. Serve hot.
